UMPI seems like your best bet. A lot of your credits would most likely fill in the General Education and some of the degree requirements. Given how much time you have available and depending on your personal speed, you might even be able to complete the 30 credits required in one term ($1500 per 8 week term), likely no more than 2 ($3000 for 2 terms). You can transfer up to 90 credits into the degree itself, though there is no upper limit overall for transfer credits.
You can work to fill in more of the gen-ed requirements and degree requirements using first Sophia, then some Study.com. You have the science with lab, but you need 6 credits for a foreign language.
