Sure. The only two courses that have to be taken from TESU are the cornerstone and capstone. You can use any other courses you like to fulfill residency. Considering the difficulty of doing 16 credits at once, you're best off picking easier courses. The nice thing about ePacks are that they are self-paced, so you can schedule them to your advantage.
Also, remember that you can always fall back on extending a course, if needed. If you ever find yourself behind, be sure to notify the mentor BEFORE you miss a deadline. If you turn something in late without notice, school policy requires the mentor to deduct points. If you get approval ahead, then mentor can give you full credit.
PLA-100 is a popular choice for the 1 credit course. Beyond that, easiest is kinda in the eye of the beholder. If you're tech-savvy, then perhaps CIS-107 Computer Concepts and Applications would be easy.
