With more details, such as your commitments, we'll know how to further provide advice or assistance to see how to get to your goal better, cheaper, easier, faster.
Also, are you working f/t or p/t, are you looking to stay or move into another field? Since you're in a medical center, it may be more beneficial to have a BOG AAS emphasis in Biology or Health related. Your UMPI BLS is going to be in "business" already, so there will be redundancy there if you go for a BOG Business, and because you just need to take the Biology with Lab at Study.com and also the Sophia.org Biology course to finish off the requirements.
Last but not least, I suggest you do the UMPI BLS Management minor first, and because you need more UL requirements, you can add the Education Minor afterwards. You should review the WIKI template for both Education and Management minors. You should apply to UMPI when you're done with your Sophia.org and Study.com courses.
Invest in a second monitor for multi-tasking purposes if you haven't already, work on Sophia.org/Study.com courses to get to the 90 credits for transfer. By using your courses/credits, you can create a plan with the template and use the WIKI for referencing those updates. You're pretty close to that 90 credit threshold, I would just apply and complete any missing credits before you officially enroll.
