A tax on sugar also harms people who cannot have artificial sweeteners for whatever reason. Sugar is taxed in the UK. I know people with PKU who would die if they moved to the UK, due to all the aspartame used there. I don't know how British people with PKU live. Not well, I would assume.

Nutrition is also a very flawed science, and information is constantly changing. Artificial sweeteners trigger insulin release. The only positive thing about artificial sweeteners is that they don't add calories. At first, it was believed that those who drank diet sodas weighed more because these were people trying to lose weight. However, rat studies found that consuming artificial sweeteners caused rats to consume more calories. Insulin is released upon consumption of artificial sweeteners because the tongue tastes something sweet, and the body thinks it is consuming sugar. When the body realizes that sugar was not consumed, people start craving sugar. Therefore, it's believed that those who drink diet sodas are consuming more carbohydrates via solid foods because of cravings. 

There's also not a direct relationship between sugar consumption and developing type 2 diabetes.

I, personally, have a bad reaction to foods that contain a large amount of sugar alcohol. I've also had bad reactions to glucose and fructose substitutes, such as allulose.
