Seems like an Associate's in IT would be very easy for me - I'd get ~15(?) credits for AWS Cloud Practitioner (already have that cert) and 39 credits for W3S PHP cert (don't have it but would be super easy).
Purdue Global has some open learning courses that are free or low-cost that including College Comp I & II.
I believe these courses are similar to the Professional Studies degree which only have 1 paper/assessment per course instead of the 1 per unit of regular courses.
