The free ethnics course does work. It comes in as two credits, but you can e-mail academic advising to have the course fulfill the requirement and make up the last credit elsewhere.

As you only want the degree for resume purposes, did you see if you could complete the BA in Liberal Studies faster? It might be the same, but you have a chance to bring in more credits this way.

I personally don't know anyone with a liberal studies degree with a decent job, so I think I'd consider Psychology instead even though that nets me only 54 Credits instead of 60 if Sociology isn't feasible.
