I think it stems more from the fact that so many visionary entrepreneurs were drop outs. I think it's a move away from "what ivy did you graduate from?" toward "prove/show what you know". I think they realize they are missing out on a lot of potential talent with a degree wall in place.
I think Hilton is on that list. Hospitality has LONG been one of those areas where you go further and advance higher the more experience you have. No one really cares about your shiny new hospitality management degree. Did you work your way up and put in the time to be where you are?
It's been a long time coming. I hope the idea catches on like wildfire.
