I am working on my 2nd Bachelor's through TESU (reverse of you, I'm now earning my BSBA). My first degree was BA in Social Sciences (now offered as BALS with Soc Sci concentration). It is very test-out friendly. The Social Science concentration is the *easiest* option you mention simply because all of the courses you need are available at Straighterline and Study.com. You will have to do the Capstone at TESU regardless of the degree. All of your Gen Ed credits won't need to be re-done.
With that being said, the Psychology degree sounds like a better fit for your career plans! The reality is that there are only 3 additional courses that you will have to find sources for the credits that aren't currently available through CLEP, DSST, SL, Study.com (rumored to be working on ACE credit for 2 of the classes) etc.: History & Systems, Physiological Psy, and Ethics in Soc Sci. There are 39 AOS credits required: shouldn't be too difficult to come up with new or add'l credits to fill 'em up. It's free to re-apply if you are a graduate. Won't hurt to apply and then negotiate any issues you have as they come up.
