As someone else already said, Comparative Politics used as your Civic Engagement requirement won't also go into Knowledge of Human Cultures, but the extra 3cr from A&I Lit will go there instead.
I would also take US History II from Shmoop in Gen Ed Electives, since there is supposed to be a lot of overlap between it and Modern European History. And while you're at it, take their Finite Math course, I think it will come in as MAT-110, in Gen Ed Electives. And since you've taken Precalc, do Shmoop's Geometry course as well. Not certain it will work, but can't hurt if you have time left in the month. FYI, I took Finite Math in CC, and TESU brought it in as MAT-110 (it was the course before Stats, and the syllabus for it looks exactly the same as the Shmoop syllabus).
If Business Ethics won't work, you can take BUS 308: Globalization & International Management course from Study.com there.
For the AOS, I would recommend Study.com's BUS 306: Strategic Human Resources Management since there will be a lot of overlap with the regular HRM course. And BUS309: Digital Marketing & Advertising, for your MAR course.
Then, either Study.com or SL has accounting courses you can take: SL has Financial Accounting which comes in as ACC-201 (Int. Acctg) or Managerial Accounting which comes in as ACC-303 (Cost Acctg). Study.com has ACC301 Applied Managerial Accounting which comes in as ACC-301 or ACC302: Advanced Accounting which comes in as ACC-401.
That should fill everything up for you.
