AP is open to any age. You have to find a testing site, which does have to be a high school.
AP is a poor choice imo. It doesn't yield a lot of credit and it's offered once a year.
I don't know if the university you are attending accepts any other brand of exam (there is no such thing as Chinese CLEP) but there are other exams you can use. I agree with ACTFL. The other is NYU Foreign Language Proficiency Exam.
EDIT: I also wanted to ask, if you don't mind, which university you're attending?
