Sure! You can do a BA in Liberal Arts, but be sure to fill your requirements with everything that will be part of the nursing prereq list. If I can suggest you NOT test out of nursing prereqs, you'll keep yourself competitive. Use CLEP for your other gen eds. Take classes (and earn top grades) in Bio 1 with lab, Chem 1 with lab, Anatomy and Physiology with Lab 1 and 2, English Comp 1 and 2, Intro to Psych, and Intro to Soc. If possible, consider taking college algebra for a grade, and add in stats for good measure. If you search the archives, I think I did an outline several years back on this exact topic. All the best!
