Great job so far... you just need to keep going with courses outside of UMPI since you didn't follow the recommendations of doing everything first for transfer. Here are the WIKI pages to help you get those courses transferred over. You need to work with Jessica to finalize your requirements, but you can do all the Sophia.org that you can from this list, if you don't have a corresponding course from Sophia.org, then do the one from Study.com, and if no course exists, complete it at UMPI. It's that simple...

You are right I had to finish my GEC first but I didn’t because of my financial aid. I don’t know why I have to do HUM 103 when I already had Humanities 201: Critical Thinking & Analysis.

I'm not sure what your numbers relate to as the GEC is 1-5 with letters at the end.
No, you're not done as long as you have 40 credits. You need a minimum of 40 credits and to complete every single area of the GEC. This should all be on your degree evaluation form from Jessica from your first session.
HUM103 is no longer offer by UMPI that may be why you have to take a course for that area of the GEC. Do you have a spreadsheet for your courses or the form from Jessica?
MAT140 is a required course for the BABA degrees. Your other option is taking Calc 1 on Sophia. MAT140 at UMPI is MUCH easier.

This is what she audit for me last year. The greens are done . So far I think only three classes left but she asking for more in her new audit .

For HUM 103 I did 1-Humanities 201: Critical Thinking & Analysis from study.com.
You will have to ask Jessica if UMPI is still accepting that Humanities course from Study. HUM103 is no longer offered by UMPI so That course may no longer transfer. If there's courses she saying you need to complete, then you need to ask her why since you already transferred in courses to fulfill those areas of the GEC. We can't answer this for you. The religion class from Sophia is no longer accepted for 5A. This changed over the summer. You need to stay up to date on changes. This is why was say to get your courses done as fast as possible because changes happen often. Did you take ethics from Sophia?
No I did not . But the class I did at study.com is acceptable at umpi for hum 103.

It was acceptable then because UMPI was still offering HUM103. That has changed. This course is no longer offered. You need to check with Jessica to see if it is still being accepted. You'll need to ask her about the other courses if she approved them in the past.

Oh sh*t! So the Critical Thinking course (which would've transferred as HUM 103 at UMPI) that I was going to finish today on Sophia is for nothing?! pffff. Gonna find another course without touchstones then.

We don't know if it is still accepted. UMPI no longer offers HUM103 so there's question as to whether or not it's still accepted for the GEC.
