@AnyName, you've completed the template nicely, but you've missed the last post addendum where your scenario or situation is more detailed, it'll provide info on your budget, commitments, dedicated time for studies and more. This will provide valuable clues for us to use and help you decipher if a competency-based degree provider such as PUG/UMPI/WGU would be better or an alternative credit friendly institution that allows max transfer such as Excelsior/TESU would work.

I had great luck with Study.com for my UL credits at EU. They all transferred in well to the LA degree and I have just started my Capstone course.
Business 318: Management Ethics
Sociology 305: Sociology of Work
Psychology 315: Psychology of Motivation
Business 311: Project Management
The soc and psy transferred in as science while the project management went under "any" in my Map.
There are likely easier classes to take, but these were semi-interesting and got me to do a bit of writing which I wanted to prepare for the couple of EU classes (it really did help prepare me). The list provided by EU/Study.com shows generally what UL credits will transfer from Study.com but you should ask your advisor before you do a ton of work or pay. I did these courses in about a month and a half since I was waiting for the next term start for EU anyway.
After having the EU people check out my transcripts, I only needed these classes and the 7 EU credits to finish. To me, EU has been pretty great, the cornerstone was a short paper and some discussion posts but the setup does feel worthwhile. The capstone is a bit of discussion and another longer paper.
Did you get an official MAP from EU yet? That should tell you where you are. EU classes are not cheap so only taking the 7 credits required there seems to be the best method if you are concerned about value.

Coopersmith, Study.com, etc... great resources for upper-level transfers to Excelsior, there was a thread recently in regard to LawShelf, even though most of these are elective courses, some came in as social science courses. For their special of $70 for 3 or $105 for 5 exams, it's a great deal if you can get those UL requirements done here.

So I don't have a budget per se, but just has to be inexpensive. I don't have any other commitments than work which is about 32-40 hours a week so I have plenty of time to dedicate to school. Which I plan to do. I think I would like self paced the best. Like when I did the Sophia classes, I just did one until I completed it and then moved onto the next. That works best for me to concentrate on one class at a time.

If it helps any, Coopersmith isn't looking for extensive essay answers. Maybe 3-5 sentences that hit the keywords they're looking for. Maybe even just a single well-crafted sentence.

Yeah I took one with the essay questions, all the multiple choice I usually get right, they come easy to me. I only study the provided end of course review which works well when answering the multiple choice questions but doesn't work well for the essay questions if that makes sense, well at least for me.

One question the lawshelf courses are valid as arts and sciences courses for a BSLS at exelsior?
Some are marked as elective and some others as business elective.
Can I guess that the Electives are Art and science and the business not?

Electives and Business Electives are not Arts & Sciences - which are Humanities, Social Sciences, Natural Sciences, and Math (so things like Psychology, Sociology, History, Science, etc.).

@Kab, Depending on what the electives are, Business and Professional electives as mentioned won't work, but if those electives are in subjects mentioned above, they will work just fine.
