I have a few questions
1. {I decided to take courses at study.com} Which (4) below which are the easiest at study.com?
2. How is the proctored exam at study.com?
3. What is the minimum grade for passing a course?

1: I can't really help you with that, but the ones without assignments are usually faster/easier. If there is more than one assignment, take it at UMPI instead.
2: They use RPNow. It's a recorded proctor, so you don't have to schedule anything. Take the exam as soon as you feel able to pass the material.
3: 210 points. For courses without assignments, the quizzes are worth a total of 100 points and the exam is worth 200 points. For courses with assignments, 100 points go to quizzes, 100 points to assignments, 100 points to the exam.
It is important to get 100% on a quiz within the first 3 attempts. So long as you actually read the questions and make note of what you got right and wrong, this should be easy. If you can get 100% on all quizzes, you only need ~56% on the exam (for the courses without assignments) to pass. If you need to take Biology 101L from SDC and you get 100% on the quizzes and 98% on the lab, you'd only need about 15% on the exam to pass.

Few things to keep in mind. We don't know what your degree plan is as you haven't shared it on this thread. You'll need to complete a minimum of 30 credits at UMPI including of the UL courses. Every UMPI course only has 1 paper/project for the Final Assessment. Many courses from Study.com are more work than a class at UMPI. I would take a class like Marketing Management at UMPI for sure because it has an exam as the Final Assessment. Have you completed the GEC? I'd focus on that outside of UMPI especially the lab science and foreign language requirements.

Transferred 98 Credits. Starting in Spring 2 March.
Need (14) Classes according to my degree plan to complete the degree.
Want to cut it down to (10) Classes which will equal to the (30 CR) required.
Looking to take (4) classes before the start date which I would like to decide (4) from the list above.

Keep in mind that you need to complete most of the UL courses at UMPI. Also UMPI is 1 paper per class. Some Study.com classes are multiple papers. None of those classes are hard or take a long time to complete at UMPI. I finished the Marketing Management course including the exam in 3 days this session. You'll need to complete the courses and get the transcripts sent to UMPI before the session starts. Since you're enrolled have you asked for permission from your advisor to transfer in additional courses? You need permission once you're enrolled. It sounds like you are enrolled. Getting permission isn't a big deal.

Further to that, I seriously recommend you provide more details on what those 14 courses you were informed to take, as the list you provided is 7. The main details are missing in your questions, as we don't know what degree you're going for, what courses are missing, what is required and what courses you have transferred in...
I would try to complete as many courses as possible before enrolling, if my guess is correct, you have already "decided" on 7 of those 14 courses and want us to recommend the final 3-4 courses to finish off the degree. Each person studies different and the subjects they like determine what would be easier, faster...
Essentially, without more background info and what courses you have taken or like, it's hard to say what would be easier for YOU, as it may be easy for others. You just need to note to yourself, the BULK of the Upper Level has to be from UMPI and that includes the Major/Minor you're going for... if you look at the 300/400's, those are the ones you need to take from UMPI from the list of 7 you have above.
