I'm really hoping to get a teaching position next year but it's going to be hard with graduation being in June. I think it would probably look a lot better having my associates and the confirmation from the school showing the bachelors will be coming in June.
It may not matter as much as you think. You would basically look like every other new grad whose degree doesn't confer until June.
If you're starting the Capstone in Dec, I would suggest you go ahead and apply for March graduation for both degrees. Technically, the November term is the latest one you can take a course in for a March graduation, but a few people here have started a month late, and still managed to get their capstone grade recorded in time to graduate. The worst that can happen is that they don't get it in and they roll you over to June graduation, where you would have been anyway.
When the graduation office tells you that your capstone grade is missing in late Jan or Feb, tell them what the situation is, and they will work with you. Also let the mentor know some time before the end of the course so they can try to grade your final paper promptly.
