Humanities was pretty easy, but then again I had already taken all the history test, both lit. tests, and had already done a lot of reading.
Overall Analyzing and Intrepreting Lit. is the easiest. I studied a week for that one, and scored in the 60s. It's pretty much reading comprehension, you just have to know your literary terms.

My easiest test was Analyzing & Interpreting Literature (practically no study), with English Comp w/ Essay coming in 2nd place.

I love history, so the easiest CLEP for me was Western Civilization I. The easiest DSST was The Civil War and Reconstruction.

Intro to Psychology was my best. After two weeks of study I scored a 71.
I think it depends on a person's own opinions and preferences... I took the Substance Abuse DSST (which was rated as one of the hardest tests on the chart I was looking at) and flew through it, then took Macroeconomics (the chart said it was pretty easy for most) and failed miserably, haha

I haven't taken analyzing & interpreting lit. but I definitely say intro to sociology was the easiest BUT STUDY. The flashcards are more than enough to get a good score.
I looked at the psychology cards but it was a lot harder for me to get my mind around the stuff.
From reading opinions on the forum for analyzing & interpreting lit. some people have it and others don't. (of course you need to study)
Also prior knowledge is important to whatever you chose.

For me it was the Information Systems & Computer Applications CLEP. I scored an 80, so I suppose that suggests how easy I found it to be.
