Analyzing and Interpreting Literature was by far the easiest. One of my sons took it and he says the same thing. No need to waste time studying for it.

Obviously, this depends on each person's interest and former experience in a field. Based mostly on study time, the following were my easiest exams:
CLEPs:
Analyzing and Interpreting Literature:
Studied for 4 days and passed with a 74. I had never really taken a literature course before, but I am an avid bookworm.
College Composition:
Studied for 4 days and passed with a 62. I enjoy writing and English, so this wasn't very hard for me. I had previously taken the Public Speaking DSST, which prepared me a LOT for the essay portion of this exam.
Introductory Psychology:
Studied for 4 days and passed with a 73. Super easy -- much more so than the practice tests I took.
Introductory Sociology:
Studied for ~a week and passed with a 67. Psychology helped me immensely in preparing for this exam!
Non-CLEPs:
Environment and Humanity: The Race to Save the Planet DSST:
Studied for 2 days and passed with a 59. The Specific Feedback thread for this exam is amazing!
Technical Writing DSST:
Studied for 4 days and passed with a 66. Again, I enjoy English, but there was also a lot of other info to learn.
FEMAs:
(Obviously!). Very easy -- I have passed enough to earn 24 credits, and usually spent 1 hour (2 max) on each one. An interesting, cheap, and fast way to test out of free electives!!
