I want to get General education and some specialty classes for credit. In the fields of CJ and fire science on the cheap.

SL has at least one course. There are a couple DSST. There is at least one UExcel.
GenEds are cheap from CLEP (free through Modern States), DSST, SL, Study.com (get the scholarship for 6 free classes), TEEX, TECEP, Davar, and more.

I think that Penn Foster has some Fire Science and CJ. There is not much that's cheaper, just around a dozen credits that are cheaper.

I don't know which school you're attending, but CSU Global offers a lot of CJ CBEs. Propero has CJ courses, but they and Penn Foster are more expensive than CBEs.

No cheap fire science courses that I know of, but you can almost test out of a CJ degree at TESU using a combination of methods (the usual CLEP/DSST, Study.com, SL, etc.) plus Propero ($299 to $330 per course).
It won't be the cheapest degree on here, but it will certainly cost less than a CJ degree anywhere else.
Oh yeah, there is the Patten CJ degree - it's a BA in Psych, with a concentration in CJ.
