Can I take CLEP exams and then transfer them to a university so I can have a transcript saying that I have this many credits? Can this be done without having to take any classes at the university? This is for a job that wants to see at least 48 credits to apply for a job opening.

https://www.charteroak.edu/Current/Progr...gistry.cfm both offer services where they will give you a transcript of credits earned without being a student there. Check these out to be sure that they will meet your requirements.
