To meet the oral comm requirement at TESU do I need to take Study.com's public speaking course or could I take interpersonal communication instead? I'm fine with either but I'd prefer not to have to record speeches, which seems to be requisite for public speaking.

Presentation Skills in the Workplace is your best bet. Really short and no speeches.
