BUS 203: Intro to Retail Merchandising
BUS 318: Management Ethics (UL)
MARK 303: Global Marketing (UL)
MARK 306: Principles of Selling (UL)
EDU 210: Technology in the Classroom
ART 104: History of Western Art II
POLS 103: Comparative Politics
HIS 100: Western Civilization from Prehistory to Post-WWII
HIS 105: US History from Settlement to Present Day
HIST 307: American Civil Rights Movement (LL for now)
COMPSCI 103: Computer Concepts & Applications
COMPSCI 302: Systems Analysis & Design (UL)
COMPSCI 303: Database Management (UL)
So luckily, the only course that was slated to be UL, but didn't get it, was HIS 307. But since there are plenty of UL History courses available here and elsewhere, I don't think it's an issue (it's not stopping anyone from being able to get a degree inexpensively).
Study.com has so many good options. I think I'll try to use HIST 307 for my TESU diversity requirement. A nice interesting alternative to World Religions or Sociology. POLS 103 Comparative Politics should work for this requirement, too. Thanks for doing so much work keeping track of all these classes, dfrecore.

Does anyone know if any of these new classes will fulfill the "non-western history" requirement at TESU?

Not sure about a non-western history requirement, but Study.com is working on a non-western lit course. Not sure if that is what you are looking for.
Working on: Debating whether I want to pursue a doctoral program or maybe another master's degree in 2022-23

We've gotten mixed feedback on that, do you have it on your transcript as such? I've seen that it won't count because it's history of the war from the American perspective.
We've had others say that the Soviet Union DSST counts as non-western, however.

Those offered by Study.com are all History, not Literature. The TESU BA-English has a Nonwestern Literature requirement (currently the only course that is not easily filled at a low cost) Study.com is in the process of building a Nonwestern Literature course but it has not been submitted/approved for college credit (yet).
EDIT: I've seen so much talk about the BA English recently that I didn't even think about the BA History requirement for Non-Western when I first responded.

I started this journey in the summer of 2016. I hoped to be done sooner, but I am still proud of the rate at which I have gotten my schooling done with respect to the many months of military training and deployments I have undergone.
