Hard to say; I'm not one to rush through and try to complete a course quickly, so I'm about the worst person to ask on that part. As for easy/hard, I didn't think it was easy, but I did find it interesting, so I enjoyed it. How's that for a non-answer.
No clue on the Study.com version, since most people don't take the same course from 2 different providers - there's no point in it. So pretty much impossible to compare the exact same course this way.

I took it and enjoyed it. I'll be honest I didn't rush through it - took breaks, so I can't tell you for sure how quickly I could have completed it.
I do want to add in case it matters to your degree plan that Project Management with Sophia has been downgraded to a LL course as of 03/01/18 (through ACE and w/TESU)

I'm not feeling the study.com assignment and was wondering if the sophia had one.
It sucks that sophia's course is now LL but I only need it to fulfill that Project Management requirement.

I looked over the syllabus for Sophia and didn't see any mention of extra assignments/projects. The study.com course is UL on ACE.

There were no extra assignments or projects. It came into TESU as LL, Intro to Project Management. It took him about two weeks at about 3 hrs a day. I would say the difficulty for him was 6. If you have an interest or experience it would be easier.

It should. As long as you end up with 15cr of UL in the AOS (+ capstone), it shouldn't matter which ones are UL and which are LL.
I would just ask TESU to preplan it and see what they say.
