UMPI and then University of the People should be a good choice. It gives you a degree that ought to be valid in all countries (UMPI) and an advanced degree that may or may not be looked on as "valid" in various countries. Even if you can't use the Master for immigration, you may be able to use it for employment and use the Bachelor for immigration.
