Sauce or Gray??

Interesting...having grown up on Naga Shima (LI) and been Italian (by marriage) for nearly 28-years, I've known the "Red Stuff" as sauce but have heard a couple of "Jersey" Italians say gravy. I too believe these are regional expressions per se, but wonder just how large is the region (or where it has spread to).

I call it sauce and have never heard it called gravy. BUT, I lived in India, and they call the sauce (no matter what it's made out of, but it often has a tomato base) gravy.

My Grandma always called it gravy & she was a Jersey Italian!
I always teased her and said gravy was brown & sauce was red!

If anyone dares call it "gravy," they deserve to never eat pasta again. That includes lasagna and any of the stuffed, baked and filled varieties. In fact, I'm coming with my rent-a-truck right now to gather all of your packages. For shame.

In all honesty, the only time I have heard it called gravy is on the Sopranos. :eek:

I think sauce now but I got to watch a few more episodes of Jersey Shore, Housewives of NJ, and Jerseylicious to make sure. Otherwise, I'll have to facebook Snooki.

Although, back in the day I do recall Vinnie Barbarino aka John Travolta from Welcome Back Kotter call it sauce, y'know like y'know.

I live in the southwest, but our area has a lot of people of Italian ancestry, so I've heard it called gravy, even by non-Italians. It stumped me at first.

I grew up in San Diego, which has a long-standing Italian American community...and I never heard it called gravy. Our abominable garden snails, however, are (I am told) culinary snails brought by Italian immigrants.
