The previous answer goes into some additional detail, but the TL;DR version is that you get two free exams per month which can be taken any time up until the last day of your subscription. After that, any remaining exams are lost. The only exception is if you paid for additional exams during your subscription (at $70 a pop) which were never used. You can still redeem any remaining paid exams even after your subscription has ended.

Technically, you only need to have completed all the quizzes to unlock the final exam. However, if a course has assignments, that course won't be marked as complete until all quizzes, final exam, and any assignments are complete. Assignments can be submitted after the subscription period has ended as far as I know.
