I took personal finance and substance abuse. Personal finance was a little easier for me (and I'm a teenager). It was more common knowledge than substance abuse. If you are a paying member, check out specific exam feedback. If not, search. You may also want to check out

Substance abuse was a great test. I find the topic extremely interesting and fun to study. Fun study = easier test IMO.
Sorry I have not taken all three, but I would say take the one(s) that you find most interesting or where your background is strongest. If I end up needing it, I would take Here's to Your Health - from what I've read here, the feedback is that it's relatively easy. Finance bores me to tears, so even if it's an "easy" exam, it would probably be tougher for me to study.
One bit of advice, unless you have a very strong drug background, don't take Substance Abuse cold. The IC cards are enough to pass, but you will need to study.

I took Substance Abuse a couple weeks ago. I scored a 413.
To study, I used IC (I went over the flashcards 1-2 times in each section), the DSST online book (via Petersons), Peterson's practice test, the DSST fact sheet 11 question test, and forum info. My last score on the 3rd Peterson's test was 51%. I spent 3 weeks, and probably about 15-17 hours, studying. I don't think it was too difficult; very manageable.
The specific feedback is very accurate, even some of the info from 2009 came up on my test.
Some of my content included:
what drug is in sch. II?
several questions basically defining side affects, tolerance and drug dependency.
What drug is a gateway drug?
What does the DSM do?
What is the most serious/dangerous withdrawal affect of alcohol?
1955 anti-psychotic drug (Chlorpromazine)
What St. John's Wort and Kava-Kava are used for
What surgery cocaine is used for
What drug comes from a cactus that is used by Native Americans for ceremonies or something (peyote)
Where to deal with initial alcohol withdrawal symptoms (inpatient center, outpatient, or home? not sure)
What drug is approved by the FDA for insomnia? (Lunesta)
Cocaine withdrawal symptoms
Heroin withdrawal symptoms
Few questions on Cannabis/THC/Hashish

I have only taken Substance Abuse and Here's to Your Health and I found them both to be fairly easy, but Here's to Your Health was easiest, for me anyway. I didn't study as much for HTYH and I found the questions to be more general and broad than on SA. The SA test went very in-depth into specific legal/illegal drugs. It was hard to remember all the different type of prescription drugs and their uses. I used Peterson's
Free Clep Prep.com website for studying for both tests and that was it. Good luck!
