I have more than 100 credits, but to only have 70 applied so far is a bit underwhelming...

I got a reply re: College English. They said with that course title, they weren't able to determine equivalency so I have to submit a course syllabus. Might be difficult as I took this course in 2003/2004 and I can only seem to find down to year 2010 on the college website, unless the college can somehow find it for me.
I was able able to find the catalog for a course that I took 25 years ago, the community college has digitized their catalogs. Try searching for the correct years' catalog instead of the course.

Since you're enrolled with TESU, get them to do an evaluation for the BSPS to see if you may be closer to 90-93 credits for that degree. Whichever degree you're closer to, work on the missing requirements. I think they're still "looking" into the BALS for you to see if any of the courses can go into the General Education (I can see one already, the CIS course for example).

I don't think they are doing anything else from what I gathered, I would have to contact them again.

I contacted the school after not finding anything online. They don't appear to keep older copies. I remember reading something on a course outline too that it was the students responsibility to make a copy of it... In reality, I don't think the course content changed much, maybe a different textbook being used etc.

Can someone help suggest what remaining courses I should take to fulfill the LL requirements mainly from Straighterline / Study.com ? Possibly create a spreadsheet?
If this is as good or as close to good as my evaluation is going to look, I might as well get started on more courses, although I did not expect to need this many more. I thought I was getting closer to just needing upper level.
I have 2 weeks off in October, so instead of taking an actual vacation, I am just going to do this stuff.

I agree with bjcheung77 now that I see all the legal AOS type credits you have I would recommend them doing the evaluation for the BSPS too: https://www.tesu.edu/business/bsps/index
One thing that TESU is quick on is adding an official evaluation for a degree plan for an enrolled student. I would be surprised if it took them more than a business day to do it once you made the request.

Credits have to be manually applied in the evaluation, as there are simply too many variables (the Professional Studies degree has many path options)

Ok thanks for the info. I think I am just going to keep it as is, I see BSPS requires another math, which I am not inclined to do.
I renewed my Straighterline membership, going to knock out some history courses for geneds.

Try the school's library. They should have all the catalogs in their system even if only paper copies. That won't get you a syllabus, but it should get you a course description which might be enough.
