Maybe a basic question, but I couldn't seem to find a simple answer anywhere.
For the various alternative credit providers such as study.com, sophia, saylor, etc., how do the credits come in for each of the Big 3? As letter grades that affect GPA, or simply as pass/fail?

Pass/Fail unless they are RA (regionally accredited.)
SDC and maybe others will assign a letter grade, but they only come into TESU as pass/fail.

From my limited experience, any transfer credits will always just be credits. They will not have any type of grade nor factor in to GPA. The schools I have attended simply list them as a “T” for transfer.

I think COSC used to assign grades for credits transferred in from SDC and Sophia if you used Parchment instead of ACE. But I think it's just pass/fail now.
In progress:
TESU - BA Computer Science; BSBA CIS; ASNSM Math & CS; ASBA
Completed:
Pierpont - AAS BOG
Sophia (so many), The Institutes (old), Study.com (5 courses)
ASU: Human Origins, Astronomy, Intro Health & Wellness, Western Civilization, Computer Appls & Info Technology, Intro Programming
Strayer: CIS175, CIS111, WRK100, MAT210

The other thing to remember here: the Big 3 (and many schools, maybe most) don't actually transfer your GPA from other schools. So for instance, let's say you went to 2 CC's prior to going to one of the Big 3: CC1 you have a GPA of 2.5; CC2 you have a GPA of 3.0; when you send your transcripts to one of the Big 3, they may look at your GPA in order to determine whether to let you in, and they will look at each individual course to determine whether they'll bring it in; but none will bring in the grades in order to compute your GPA at the new school. Your GPA at TESU or COSC or EC is 100% only based on the courses you take at those schools. So as you go from school to school, your GPA "stays" at the school you earned it at.
If you decided to go to a graduate school, or wanted to get into a competitive program somewhere for another BA, they will want all transcripts from the original source, and they will compute your overall GPA themselves.
So ACE credit won't matter to most of these schools. Even if EC were to put a Sophia grade on your transcript for instance, it won't be computed into your GPA at EC, nor will a future school look at the EC transcript to compute your non-EC GPA; they'll want the original source.
