when you have a lot of pre-existing credits, this is certainly worthwhile. It can be pricey though, and if all one has is a handful of general ed credits, we generally already have a decent understanding of where they will fit.

Is that plan from a long time ago? The BS in Business from Excelsior has a six-hour Capstone, not three.
The Bachelor of Professional Studies in Business and Management has a three-hour Capstone, though.

Regarding your Arts and Sciences requirements:
1. Two excellent and cheaper alternatives to the UExcel English are Straighterline and Tor College Credits English Composition I and II. Tor is also a great source for the Information Literacy requirement.
2. He included Soviet Union and Vietnam War in the plan because they are part of the upper level credits you need. However, there are other ways to get those credits if we move things around a bit. For example, you have already completed the Social Science component with these classes:
Introductory Psychology 3
Introductory Sociology 3
Western Civilization I 3
CLEP Macroeconomics 3
CLEP Microeconomics 3
To make up for those 6 upper level hours, you could replace Soviet Union and Vietnam War with any Arts and Science credits. For example, any two of these:
DSST Ethics in America
UExcel Bioethics
UExcel Abnormal Psychology
UExcel Psychology of Adulthood and Aging
UExcel Juvenile Delinquency
UExcel Research Methods in Psychology
UExcel Social Psychology
UExcel World Conflicts since 1900
UEscel World Population
UExcel Pathophysiology
Those are the cheaper exams. The spendy ones ($450 each) also work:
UExcel Ethics: Theory and Practice
UExcel Foundations of Gerontology

After those upper levels, you would need 6 more Arts and Sciences electives. For those you could use ALEKS Beginning and College Algebra if you have taken or will take them in order. This would replace CLEP Western Civ 2 and American History 2.
Beginning Algebra > College Algebra > Precalculus > Stats
Excelsior is picky about order of math classes, so make sure to go in that order.
Not a big deal if you haven't taken them in order though. You could take any of these that you listed as possibilities:
Intro to Educational Psychology
Analyzing and Interpreting Literature
Human Growth and Development
Humanities
Social Sciences and History
Natural Sciences
American Literature
English Literature
DSST
Counseling
Astronomy
World Religions
Lifespan Psych duplicates Human Growth and Development

For your Business Core courses, you have made a lot of progress already. The business requirements have changed a bit since this plan was made, so here they are based on the latest degree chart. Business now requires 54 hours instead of 45, but don't panic.

What infuriates me on behalf of the OP is that this guy is USING OUTDATED DEGREE REQUIREMENTS, planning in courses that the OP actively does not want to take, and not mentioning the whole 6-hour Capstone situation.
Imagine thinking you have all but the Capstone done, trying to enroll, and finding out that the requirements have changed like that.
If I were the OP, I would ask for a refund.
