So I've emailed Shea Cushman (the admissions coordinator for YourPace program) about high school transcripts for adult learners, and that's what she said:
"If you have 60 or more transferable credits we do not need your high school transcript".

When I asked UMPI about biology they said they prefer Straighterline. I couldn't get a clear SDC answer from them

There are students who brought in over 60 credits and still needed a high school transcript. That maybe because most of the credits were ACE. I have an associate degree and did not need to supply my high school transcripts.

For YourPace, are you allowed to redo/resubmit a paper to improve your grade in the class? Or you're stuck with that grade? Because I want to have a 4.0 in the end, and that seems difficult for some language/writing classes.

They transferred TESU SOS 110 requirement as English Comp II. I had to submit the final assignment instructions and rubric, final paper, and professor's feedback. My advisor forwarded it to the English department and boom the class was dropped and another assigned.
I then informed them that the replacement class I would be taking with Sophia and they replaced that with the next class on the list. I don't mind the list, for me, it gives me a sense of direction of not saving what I don't want to do for last (if that makes any sense).

Like many colleges only D and F get replaced, if you have a B I don’t think they will replace it
