You will simply add in the course, await their approval, and no matter the age (as long as it is within the cerification dates) you'll get the credit. Make sure they approve it before you close you ALEKS account or you may have trouble, approval should only take between a few hours and a day (if during the week).
My completed "non-traditional" credits include 27 credits from CLEP, 30 credits from DSST, 6 credits from ALEKS, 19 credits from FEMA courses including PDS, 3 credits from NFA courses, 10 credits from ACE Workplace Training, 3 credits from a TESC TECEP exam, and 3 credits from a TESC PLA course.

Also I think I once read you should take the math classes in order, maybe someone can back me up, but the order of classes matter as well!

Like they said, may as well sign up now as it'll make things easier. Also, basically repeating what the previous posters said, once you finish an assessment over 70%, WAIT for ace approval before moving on!

It doesn't matter as far as getting credit for the ALEKS courses, but it's usually smarter to go in a certain order. Depending upon your degree, as well as the school you are attending, I'd recommend the following order: Int. Algebra, College Algebra, Trigonometry, Precalc and Intro to Statistics. Remember that not all of these courses may be needed or count for credit where you wish in your degree plan depending upon your major and school.
