Everyone will have a different opinion on which one is the easiest. Personally, I would check the syllabus for ones with no exams and where the final paper/project is 20-30% of the final grade.

PHI-130 Critical Reasoning is one of the easiest courses. Took me 13hr to do, no books to read.

A short course, does have 2 tests but they are really easy and only worth 20% of your grade.  I studied less than one hour for each of them just reviewing assignments and glossary terms.
