The natural counterpart for this forum in terms of money, insurance, etc. is the bogleheads forum. Do a search for health insurance or post info. on the site. Excellent forum and objective advice.

I'm in a faith-based health share program and have been for 3 years. I pay $170/mo for what I basically consider catastrophic coverage. Meaning I don't have coverage for doctor visits, I just use the local urgent care for the sniffles. I have never needed to use it for anything catastrophic yet, but have friends who have and it's completely legit.
Have you considered real estate sales? There is a saturation of agents in the market, but so many of them are not working the business. The good ones make great money. And people skills are the thing in that industry. Millenial first time buyers are on the rise and they love tech in their home search. Interest rates are forecasted to rise this year but not enough to make the market unaffordable. Its a fun business too. The key to breaking in is to use your charm and people skills to go to work as a buyers agent for a more established agent who needs help turning their leads into customers. Just a thought.
