So I am registered at TESU, but not yet enrolled. I am awaiting transfer credits from other universities I've attended.
I will be finishing my last courses (including the Capstone) in one semester at TESU.
Does anyone know if I am able to start working on the assignments before I'm enrolled in the courses or before they start?

As much as you want to be ahead of the game, there is no option to start the assignments as you won't know what the assignments are... The only way to prepare for anything like this is to review what is required of the class, and see if you are familiar with the material. Pre-read the required textbooks if you want. You can review each class from TESU website here:
