Cakes by Van
~This would incorporate part of you name and it could also be a marketing ploy if you delivered cakes using a van.

Simple Simon is good but too close to Simple Simon's Pizza.

You could target the low sugar market and go with Diabetic-D-Lites
OR... Go kosher and name it Moishe's or perhaps Schlemozel's and use a picture of dubya shrugging as your logo
Simple Simon could work too, even though he was a pieman.
Anyway, just some ideas.

How about "You Take the Cake" or just "Take the Cake".
Little play on an old phrase.

I also like the cakery.
But how about this for a name?
Cake! Cake! Cake! (and you have to sound excited when you say it) It would be eye catching and you would not have to read the whole thing when driving by to get the idea, but it is short enough that you could. It would be valuable for advertising. You could do all three words in different colors and it would make sense and ad to the eye-catching. Short is good with signs they should say exactly what you are so just a glance gives you the idea. That way there is no confusion that you sell cake.
Maybe it's not the best name ever but it really gets the point across as well as simply "bakery" or "cake" without being long, a foreign language, or confusing.

I ended up going with Caron St. Bakery. It is the street where the bakery is located and seemed like the best option because it is a one of a kind name.
Thanks so much for all the suggestions! Loved them.

I think that's probably best, to the point.
In a world where everybody was nerdy I would have suggested:
All your cake are belong to us
(please tell me somebody knows the reference)
