Do you have any background or interest in any of those subjects? You'll put in some intense study time. Interesting material doesn't hurt as bad.
I took both Astronomy and Environment & Humanity. I scored higher on Astronomy but I've enjoyed the subject for years and years. That being said, I came in cold on Env&Humanity and still scored pretty well.
This DSST difficulty list might provide you with a few more clues...

I would pick Astronomy. It's interesting and doesn't take too long to learn. If I remember correctly, Physical Science is one of the more difficult exams. It certainly isn't taken as often on this forum as Astronomy.
Check out the link in my signature to see my feedback for Astronomy.
Hope it goes well whichever test you take,

Thanks to both of you! I do have more of an interest in astronomy than environment and humanities. Did you guys just use the flashcards on instantcert to prepare for it?
Thanks again!
Martin.

I used the flashcards as a base, but if you subscribe to get the flashcards then you have access to the 'Specific Exam Feedback' forum. Find the Astronomy thread and pay close attention.
I also used
Astronomy - CliffsNotes
SparkCharts
..and liberal use of wikipedia.
I posted more detail in the Specific Exam Feedback forum.
