In regards to your two sentences below, you're going to run into issues: "We already have university degrees, but from different fields, and don't wanna go through the process of having them recognized or assessed." You're trying to go through shortcuts, there are none, you are going the longer way and will fail at audits when you're trying to graduate from the institution granting you the Associates.
"Optional but not mandatory: use eventually that associate degree in a few years, to obtain a BSBA in Psychology." The degrees are different, the BSBA is a Business Admin degree, the Psych is a different degree. Unless you had a typo and meant a BA or BS Psychology, or you're looking at a BA/BS in Industrial/Organizational Psychology, you want to be 'correctly' indicating that, otherwise, it confuses people.
Not OP, but can you please share some information about what you mention: "You are going the longer way and will fail at audits when you're trying to graduate from the institution granting you the Associates." Is it like a financial audit? Just curious because I've never heard of this.
