After finishing UMPI, I actually felt that APU classes were higher quality to be honest.

Interesting thought. It certainly must depend on who is instructing the class.
I think that all or nearly all of the AMU/APU instructors are adjuncts. I think this is also true with its competitors.
Many of these instructors teach at multiple colleges and universities.

At UMPI there really wasnt ANY instruction.  A few PDF chapters and youtube videos.  APU at least has direction and lectures

UMPI is more competency based education where you already know your stuff and do your own studying... interaction with the professor is limited and is always there if you needed it though. Essentially, you're teaching yourself and showing that you can do the work independently... APU is more, traditional in class but the medium you're using is online instruction.

If you look at the curriculumn, APU is much closer to the traditional 4 year degree program at top universities. APU has the best curriculum among online universities. I'm thinking about getting a degree at APU as well.
