Fastest/Easiest Bachelor's from the big three with the following courses

I'm not quite sure about completing a Biology or Health Science BA, but I do know where you can find excellent degree templates put together by Alissaroot:

Have you considered taking the Biology GRE? It, along with each GRE, is very difficult, and you would have to score well to begin to receive credit (since you already have four biology courses), but it is very inexpensive and would provide up to 30 credits at Excelsior only. I don't think it is possible to complete a Biology degree with only testing unless you use the GRE. (They are administered in April, October, and November, by the way.)
