There is a 1 time requirement to do 30 credits at UMPI. After that, the world is yours. For my BA in History, I only had to do 2 courses. For the BA in Business, I only had to do 3. I did some coursera and study.com courses to complete some of the requirements on top of the countless amounts of colleges that I have done. So yes, you only have to complete the required courses. If there is only 1 course remaining for another Bachelor's, than that is all you have to do. If you have 5 left to complete another one, then the same thing applies. There is only a 1 time residency requirement at UMPI of 30 credits (10 courses). So you could (in theory) do 10 courses of whatever you wanted at UMPI, and just transfer everything else in. As a student at TESU as well, I concur with that statement.

Excellent to hear! I believe that we should (if you concur as well) update the UMPI wiki with that information (1 time 30 credit residency with following bachelor's only requiring you to complete the required courses).

This is correct. Mintberry is correct. I reached out to UMPI, and they stated that If I want a BBA with an Accounting major, I just need to take only those courses of the account that are missing . When I looked at my transcript and they review and they told me I need 5 courses to complete another BBA with accounting major.
So here is another discovery
For the BBA in Accounting, you can do a good portion of that with Study.com & Sophia. So you could reduce that small amount even further if you REALLY wanted to. And if you really wanted to, you could do most of the BA Psychology through Study.com & Sophia too. But remember, you can only do 1 Bachelors at a time. What I did to achieve this was that when I completed all course requirements for my 1st Bachelors, I would work on necessary courses needed for the 2nd Bachelors with whatever remaining time I had left. Same with the 3rd one I did. I am possibly considering a 4th with the Computer Science one that they'll release.

Noted and thats why I took 15 course for 30 requirement during my BLS and they stated that I can do BBA with IT with 1 course, BBA with accounting with 5 more course. But now I follow your lead and will design this way.
Others are not choice except Computer Science one which I am waiting.
