@Mjake260, Welcome to the board, in addition to what you've asked, it's better to also bring in more info by filling in the addendum and template.  It's great asking questions and getting answers... To answer your questions: What is the fastest path to getting a bachelors degree, that also won’t be seen by employers as “diploma mill.”
Any degree that allows you to transfer in a max of 75% alternative credits or more for the degree, competency based programs, etc. All the institutions we recommend are regionally accredited, there are a few that accept nationally accredited credits in addition to ACE/NCCRS options.

Any recommendations on an efficient and adequate academic routes in these fields?
Without knowing your budget, commitments, study habits, etc that's asked for in the addendum and template, I would recommend UMPI for Competency Based or TESU for max transfer of 114 credits.
