Sophia doesn't keep track of which classes you've started and dropped, except for their own internal records (you're only allowed to restart a class once, IIRC). So it's not going to show up on any transcripts. Still, I would suggest downloading and looking over the PDFs and maybe doing the "trial" first Challenge to see what you think of the course. As far as course texts and Touchstone requirements go, everything is fully available for viewing during the trial.

As for how much Touchstones impact your grades, that depends on the course. You can check the score report to see how the points are allocated, then do the math from there. Going longer is usually fine. (Depends on the grader, though.) As long as you get at least 50% on the Touchstone, assuming there are only 1 or 2 Touchstones, that usually works out to still getting 85-90% on the whole course.
