Interesting, even though your academic evaluation shows you have 9 courses left, and 21 credits split within those 9 courses... You technically have 9 courses left as you can move your courses around to cover those extra two required Liberal Studies electives! July 2021 and After | Courses and Schedules (tesu.edu)
Cornerstone, Capstone, Ethics, Civic Engagement, 3 UL Social Sciences from Study.com or another provider such as the ones in ACE or NCCRS, you can check the WIKI for your options. Here are the two links I would reference.

Now to 'cover' your missing credits for those two courses I mentioned earlier in your Liberal Studies Electives. In that area, you're authorized only 6 credits that are 100 level. You've almost maxed that out with the Spanish II taking up 5 credits. Easy solution is to move two courses around, get an advisor to move both of your D. Scientific Knowledge into that spot! You can then take two easy Sophia.org science courses to add the 100 level sciences back into the area!
Note: If you're taking Sophia.org Environmental Science, it's a level 200, so you just need to move 1 of your D. Scientific Knowledge into that area, and take the other science such as Biology, Chem, or something else at Study.com
