@whateverabouts, you may want to provide us more details on what subjects interest you most. Classes may be easy for one person, but hard for another. I would also recommend you to complete at minimum 2 courses this session and 2 for the next session, even if you're not set on completing an Associates or higher.
Note: From what I read, you're putting pressure on yourself for no apparent reason. You can do the bare minimum of 15 credits and transfer in the rest to get the AALS, that's 5 courses in these two sessions, that AALS will make you an actual college grad using primarily alternative credit, entirely online/open book, and non proctored...
