So, they do have a 2.5 GPA requirement, but doesn't say on "how many courses". They're not particularly selective, just the final two courses from COSC or Excelsior, TESU would work for you. In your case, COSC cornerstone/capstone works for the GPA. Having said that, email them to make sure.
I myself have looked at a particular program from them, the MEd STEM as that's my interests, not only that but it's their cheapest MEd as well. Further to that, for some reason if someone wanted an extra MEd in something else, they have half the degree for that second degree already completed I think, it's a Dual degree option... https://www.ace.edu/program/master-of-ed...-education
