Depending on the OP career goals, the Management or Project Management Minors may be appealing as well.

That's correct, when I reach OP's age in a decade, I'll most likely look towards Management then or other options for preparing the Retirement stages of my life, I won't be looking to get another degree to "break" into a different industry or anything remote to that. I may however take courses towards a masters/doctorate or something that interests me, such as graduate certificates or a grad diploma.
