Once you're at a sufficiently large company, you probably have to do all those things.
Weekly Journal Entries: My daily standup threads, plus some of the JIRA ticket descriptions would be great starting points.
Linkedin Profile: I already have one.
Research project: I regularly lead the scoping and implementation of projects at my current company. I doubt any requirement would be more complex than what I already have to do.
Supervisor evaluations and Student Evaluations: most large companies do this already, we do this semi-annually as well. The docs would probably need a little tweaking, but it's not like I'd have to ask my supervisor to make stuff up.
I understand the points you're trying to make, both of you. My experiences with universities would lead me to believe this could be a bureaucratic nightmare, and I'd rather just code than deal with advisors and the Dean's office.
Anyway, once I get officially admitted, I'll shoot an email to my advisor, and update this thread for posterity's sake.

They keep repeating the word "course" over and over again. Sounds like they are replacing one course with another one.
