The guardian scholarship doesn't require you to be enrolled anywhere. At least when I applied for it you didn't.
Why are you waiting to enroll in TESU? Not sure if you have read over some threads about the whole when should I enroll question but in my opinion the sooner the better. I think locking yourself into a catalog year is always the best route. Also if you finish the whole process within a year you don't have to worry about losing you catalog year. If it takes you longer then a year you can take a TECEP somewhere down the road and restart the clock for yourself.
About the Straighterline / Study.com part I have taken classed from both these providers and they both have advantages and disadvantages. Straighterline course (at least the ones I have taken) are much quicker to complete. The Intro to Religion course I probably could have finished it in a day if I had time. The whole course is open book so I didn't waste any time in actually reading the book. However, if you don't want to spend money to take the final quick you have to wait three days to take it. Now Study.com has a bit longer courses but once you hit 100% of the quizzes done you can take the final. So it really depends on if you can do something in the three day wait or if your basically idle in between. Right now I just sit idle on credits until I can take the final. I already signed up for my Managerial Accounting (Cost Accounting) Final for Friday. I have 1 graded exam left between now and then so I may take the first exam again and try and score a bit higher. Got a 110/125 on the first go around, not bad but it could be a little better.
Lastly, about the Math course(s) you may want to just suck it up and get that out of the way ASAP. ALEKS is set to expire again on 3/31/17 and we still have no idea what is going on with them. It keeps getting month renewals that have been going on for months now. I wouldn't risk the cheap credits you can complete. ALEKS is $20 a month and you can complete 4 courses through them if you wanted to. I didn't take stats from ALEKS so not sure about that one but you could most likely complete one course each day if you follow this plan.
Use Mathway to help you on your initial assessment. Fill in your "Pie" a bit on your lowest score stuff. Request new assessment. Start new assessment. Now some people don't realize the assessments are not timed for ALEKS. If you hit a question you are lost on just print it out or write it down, log out, go work on it until you are sure you have the correct answer. Log back in answer the question and continue along. However, it looks like liberal studies requires only one math courses but for 12credits at $20 is $1.67 a credit, you can't beat that. I think you need College Algebra to fulfill the Quantitative Literacy requirement.
Either way I wish you the best of luck. My largest advice for you is to just start knocking out General Educations courses. They are required for all degrees so you won't waste any credits that way.
