I will echo others' comments that it doesn't really make much sense in this scenario to get an AS unless it's for personal development or in a very specialized niche. You're already in an MBA program, so getting your AS in Business isn't really going to be that helpful. If anything, it's going to raise eyebrows, probably in a bad way.
Why not take that time, effort, and money and put it toward some professional certification to spice up your resume?
