You get 2 weeks to do them, and like I said, I haven't had a problem with extensions. Although I've never had to ask before, I have seen other students in my other classes turning things in VERY late. One guy in my Discrete Math class was posting questions to the mentor about 5 weeks after the course had ended!
So far I've gotten 100% on the the first two drafts. The mentor is much more involved and instrumental than in any of my previous classes. The "final" is your completed paper. It ends up being 30% of the overall grade, so while the paper is challenging, I don't think passing the course is actually all that difficult.
